Whole-grain Pennette with Eggplant Sauce
Whole grain Penne seasoned with tomato-eggplant sauce: a great recipe for all gourmets! The mix of light sauteed vegetables, ripe tomatoes and thick cut eggplant has an intense, enveloping taste. Preparation: bring to a boil 3 and 1/5 cups (0,75 Liter) of water with two tablespoons of extra virgin oil. Just add the content of the package. Stir occasionally and cook until the water is completely absorbed.
Tips: add 4 anchovies fillets during cooking and serve with diced mozzarella cheese.
Wine: Menfi Chardonnay DOC or medium bodied white wine.
